preheat oven to 200°F C

chop up gammon joint into Lardon sized pieces

peel and slice potatoes thinly

fry gammon lardons, so pink but not crispy

put sliced potatoes into cooking dish and sprinkle with pepper, shake them to make even coverage of pepper

sprinkle lardons over potatoes evenly

make white sauce, then add grated cheese to sauce, or if you have a packet then make that up

drizzle cheese sauce over potatoes evenly, don't worry about bottom layers, sauce will dribble down

add extra grated cheese on top if you want

pop in the oven for an hour!
