2 servings

1carrot finely diced
1red pepper finely diced
1 cuppeas
1 cupmushrooms finely diced
4spring onions sliced
1chilli sliced
3 cupscold cooked rice
Soy sauce
Salt and pepper
2 tbscooking oil

Steps

15 minutes

Heat oil in pan and add all the vegetables, chilli and onion.

Fry gently for a couple of minutes.

Add rice.

Add soy sauce (about 3 tbs), salt and pepper.

Gently heat and stir vegetables through the rice.

Top with sliced spring onion
