Preheat your oven to 180 degrees Celsius and grease your baking tin

Sift your flour, sugar, baking powder, baking soda, salt and sugar in a bowl

Whisk well till thoroughly mixed

In a different bowl, beat your eggs and the essence till frothy and creamy

Create a well in your flour mixture and the mixture in halves
- 6
Add the second half of the egg mixture and use a spatula to fold the mixture

Add your mango puree in two halves as you gently fold the mixture. Do not over mix.

Pour the batter in the tin and bake for 30-35 or till your toothpick comes out clean

Prepare your buttercream icing. Mix the icing sugar and butter. Divide the buttercream into two halves. Add yellow food color to one and green on the other

After your cake has cooled, layer it in two and crumb-coat it

Decorate your cake and add the mango chunks on the top. Yum!

I wanted a rustic finish.. You can decorate as your please. Enjoy!
