
Simple Italian Sausage with peppers & onions

slice peppers and onions in 1/4 inch widths and mince garlic. set aside in a large bowl.

In a large skillet, brown sausage over high heat and then reduce heat to medium high till cooked through, then move from skillet to a bowl.

in the same pan, add about 1 - 2 tablespoons olive oil and saute peppers and onions over high heat. add black pepper, oregano, and garlic, then saute till onions are translucent. you can add more olive oil while cooking as needed.

return sausage back to pan. saute for about two and a half minutes more and remove from heat.

serve with favorite pasta, on bread, or on its own.
