Take your potato and give it a nice stab. Microwave on high for 2-3 minutes until fork tender. Once done cut into 1/2 inch cubes.

Cut bacon slices in 1 inch pieces. Put in large hot skillet. Cook until crisp. Reserve 2 tbsp of grease.

Add cut white onion, bell peppers and potato to bacon. Cook until veggies are tender

Scramble eggs and black pepper in bowl. Add to pan with bacon mixture. Cook until done.

Microwave tortillas for about 1 minute or until soft

Top tortillas with 1 tbsp of cheese, 1/2 cup egg mixture, 1 tsp sour cream, dash of hot sauce and sprinkle with green onion

Roll into a burrito

Eat and enjoy.
