Preheat oven to 180°F

Crumble WeetBix into a large mixing bowl. Add S/R flour, coconut and brown sugar. Mix to combine

Make a well in the centre and add egg, melted butter and vanilla essence. Stir to combine

Spoon into a greased and lined lamington tin. Press down with back of spoon

Bake for 20 minutes. Cool on wire rack

Melt chocolate over simmering water

Pour over slice and spread with spatula

When set, cut into squares
