Cooking Instructions

Preheat oven to 375°F

Boil 2 chicken breast. While your chicken is boiling prepare your biscuits.

Mix together flour, baking powder and salt. Cut in shortening with 2 knives or a pastry blender, until mixture is the consistency of coarse cornmeal. Make a well in centre of these ingredients; add liquid slowly. When all the liquid has been added, stir dough rather vigorously until it comes free from the sides of the bowl. Turn dough ontolightly floured board and knead lightly for a few minutes. Roll or pat out to desired thickness and cut with 2 inch floured biscuit cutter; place on ungreased baking dish.

Once your biscuits are made and placed at the bottom of your baking dish. Get your boiled chicken breast and cut it into pieces. Adding your frozen veggie mixture and can of cream of chicken. Once all ingredients are mixed let simmer for 2-3 minutes until the mixture is a little creamy. You can add 1/2 cup of water or chicken broth if you want it more creamy.

After your chicken mixture is done add it to your prepped baking dish. Once mixture is added use your remaining biscuits and add it to the top of your chicken mixture.

Then place your potpie in the oven and let cook for about 30 minutes or until your biscuits are golden brown.

Some recipes I seen calls to bake the biscuits on top of the filling in the oven, but honestly the bottom of the biscuits are like dough, it’s why I cook them separate .
