Ingredients

  • 1 1/2 lbsummer (yellow) squash, sliced
  • 1 1/2 lbzucchini, sliced
  • 1 eachred Bell pepper, sliced
  • 6 eachsmall sweet peppers, sliced (optional)
  • 1 eachonion, diced
  • 2 3/4 cupcheddar cheese, sharp or mild
  • 5 eacheggs
  • 1 cupbutter or margarine
  • 2 tbspbiscuit mix, such as Bisquick
  • 1 tbspwhite sugar
  • 1 tbsplemon juice
  • 1 tspsalt (or to taste)
  • 10seasoned croutons (Italian or Caesar)

Steps

  1. 1

    Pre-heat oven to 340º.

  2. 2

    Steam vegetables for 10-15 minutes or until tender. Drain.

  3. 3

    Mix all ingredients except bread crumbs.

  4. 4

    Pour into casserole dish.

  5. 5

    Sprinkle bread crumbs on top.

  6. 6

    Pour mixture into 2 1/2 quart casserole dish.

  7. 7

    Bake for 40 minutes or until browned and hot.
