
Mexican Shrimp Cocktail

Depending on how you want to cook your shrimp, either boil in salted water, or pan grill in butter. Transfer to a plate and allow to cool.

Chop all vegetables, de-seeding the jalepeno if you don't like spicy. Place all into a large serving bowl.

Peel shrimp & remove the tails, adding them to the serving bowl.

Pour just enough Clamato to cover the mixture, squeeze lime juice on top, and mix to combine ingredients.

Ladle into individual bowls and serve with tostadas on the side.

Note: some people don't like the taste of raw onion and garlic, you can sautee these in a bit of butter (either with the shrimp, or separately if you're boiling the shrimp. Just make sure if you cooked them together, you put them in separate bowls).

Another note: everything is "to taste" for me when it comes to cooking. Feel free to omit any vegetables and just use however much of each you'd like.
