Take squirrel make sure its scent glands are removed. if you shot it remove all pellets.

Wash well inside and out never wash after cut.

Cut into serving pieces.

Combine salt pepper and flour and dredge squirrel into it. coat well.

Heat shortening in a frying pan brown the pieces all around to a deep rich brown. it will take. about 15 mins add 1/4 cup of water, cover tightly, reduce heat and simmer till tender, about 30 minutes. Then add remaining water as needed squirrel should be very tender when done.

Remove squirrel to a hot platter, cover to keep hot. blend the remaining seasoned flour to the oil in skillet. Then add milk, gradually cook till gravy thickens and boils. stirring constantly add the grated onion stir and serve
