Heat oil and Bacon over medium heat in a large pot until Bacon has rendered.

Grate or process the vegetables and garlic into a fine mush (called sofritto) and add to pot. Cook the sofritto until it has lightly browned.

Add meats and, using a whisk, cook over medium high heat until meats are browned.

Reduce heat to medium and deglaze the pot with the wine, scraping the bottom with a wooden spoon.

Add tomato sauce and continue to cook until the liquid has reduced by about half.

Add cream, stir well, and reduce heat to lowest setting to simmer for at least 4 hours.

Finish the sauce with freshly grated parmigiano and serve with spaghetti or use when making lasagna.
