combine 1 cup lukewarm water, 1tsp sugar and 1tbsp yeast. dissolve and sit until foamy

mix 2.5cup flour, salt and yeast mixture in a mixing bowl or stand mixer. first combine all ingredients with wooden spoon or paddle attachment then knead by hand or with dough attachment until dough is soft and smooth, not sticky.

cover bowl with cling wrap and rise in a warm place for 30mins

preheat oven to 180C and lightly grease pan with oil

remove dough onto lightly oiled surface and divide into 8 pieces

combine 1tpsb baking soda with 0.5 cups warm water and microwave for 1 mins

roll dough into a long rope about 1.5cm thick and spin into pretzel shape. dip into baking soda solution, drip off excess and lay on the lightly greased tray.

sprinkle pretzels with salt and let rise for 10mins
