  1. Cake
  2. 2 cupFlour
  3. 2 cupSugar
  4. 1 tspBaking soda
  5. 2 tspCinnamon
  6. 1/2 tspSalt
  7. 4Eggs beaten
  8. 3 cupGrated carrots
  9. 1 1/2 cupOil
  10. Icing
  11. 8 ozCream cheese
  12. 1 stickButter
  13. 1 lbPowdered sugar
  14. 1 cupChopped walnuts or pecans (optional)

  1. 1

    Set out butter and cream cheese to soften.

  2. 2

    Preheat oven to 350.

  3. 3

    Mix dry ingredients.

  4. 4

    Pour beaten eggs over dry ingredients, do not stir.

  5. 5

    Add oil and beat until combined then add carrots and best until throughly distributed.

  6. 6

    Pour batter into a greased 9 x 13 pan and bake for 40 - 45 minutes.

  7. 7

    Beat cream cheese and butter together until blended then slowly add powdered sugar until all sugar is added and icing is smooth. Add desired amount of nuts.

  8. 8

    Ice the cake about 10 - 15 minutes after baking to allow icing to melt and set properly.

  9. 9

    Allow cake to cool and serve.
