  • 2Avocados
  • 150 gramsShrimp or prawn
  • 80 mlThousand island sauce
  • 30 gramsRocket
  • 1 pinchSalt
  • 1 pinchPepper
  • 2 sliceLemon

    Halve the avocados, removing seed

  2. 2

    Fill avocado to top with rocket.

  3. 3

    Mix shrimp and thousand island sauce and layer onto rocket bed. If using large prawns, place them around rim of avocado and instead drizzle on sauce generously.

  4. 4

    Pinch or crack salt and pepper to taste

  5. 5

    Drizzle lemon over avocado to taste
