Preheat oven to 425°F. Place one pie crust in bottom of pie pan and form to bottom and up sides.

Drain peaches very well. While they are draining mix sugar, flour and cinnamon. Mix in peaches.

Pour filling into pie pan, dot top with butter. Seal edges, cut vent slits.

OPTIONAL: brush crust with egg white and sprinkle with cinnamon/sugar.

Cover edges of crust with tinfoil. Bake 35-45 minutes, removing tinfoil the last 15 minutes.
