Heat the oil on medium-high heat in a medium sized skillet. Add the sausage and cook until crumbled and golden, about 5 minutes. Add arugula and cook until wilted. Turn off heat and let cool for about ten minutes.

Roll out pizza dough on a floured surface into a thin 20 by 12 inch rectangle. Next cut the rectangle in half lengthwise and cut each rectangle in half until you have 8 equal rectangles.

Next, with a pastry brush, egg wash the edges of the dough. Fold the dough over the filling and close with a fork.

Top the pockets with the remaining parmesan and bake in the oven until golden, about 15-17 minutes.
