5 lbshoulder cut beef roast, well marbled
1unseasoned meat tenderizer, per direction per pound
1garlic and onion powder to taste
1 largeyellow onion, 1/2" slices
1round toothpicks for onion slices
4 tbspolive oil

Preheat oven to 350° for 15 minutes. In dutch oven or baking pan large enough to accommodate roast plus 2" around circumference of roast, spray bottom and sides of roasting pan with Pam spray, then add oil to pan and heat.
