For Pancakes: In a large bowl, whisk the cake mix with the butter, egg, and milk till smooth and no lumps.

Heat non-stick skillet over high heat, when hot spritz with cooking spray and reduce heat to low.

Working in batches, ladel the batter intonthe skillet and cook until bubbles form in center of pancakes, 2-3 minutes. Flip and cook another 1-2 minutes. Remove and keep warm.

For the icing: Using a whisk, combine cream cheese, sugar cream and vanilla.

To serve: Pile pancakes onto plate and top with icing. Enjoy!
