Ingredients

4 servings
  1. 2 tbspolive oil
  2. 2 cupleeks, sliced
  3. 2 tbspginger root, peeled & minced
  4. 5 cupparsnips, roughly chopped
  5. 1 1/4 cupdry white wine
  6. 5 cupvegetable stock or water
  7. 1 dashsalt
  8. 1 dashpepper
  9. 1 dashpaprika

    Heat oil in a large pan.

  2. 2

    Add the leeks & ginger and cook slowly for 2-3 minutes, until the leeks start to become soft.

  3. 3

    Add the parsnips and cook for 7-8 minutes longer until they begin to become soft.

  4. 4

    Pour in the wine and stock (or water) and bring to a boil.

  5. 5

    Lower heat and simmer for 20-30 minutes, or until the parsnips are tender.

  6. 6

    Purée in a blender or food processor until smooth.

  7. 7

    Season with salt and pepper to taste.

  8. 8

    Garnish with dusting of paprika.
