  1. 1/4 tspSalt
  2. 1 tspBlack pepper
  3. 1as needed Cooking spray
  4. 1/2 cupAll-purpose flour
  5. 3 tbspButter
  6. 2Sage sprigs
  7. 1 tbspMinced shallots
  8. 1 tspChopped fresh thyme
  9. 2 tbspLemon juice
  10. 1as needed Fresh sage leaves (optional)
  11. 4(6-ounce) skinless, boneless chicken breast halves

  1. 1

    Place each breast half between two sheets of plastic wrap; pound to 1/4 inch thickness.

  2. 2

    Heat a large skillet over medium-high heat; coat with cooking spray.

  3. 3

    Place flour in a shallow dish; dredge chicken in flour.

  4. 4

    Add chicken to pan; saut? for 4 minutes on each side until done. Remove chicken from pan.

  5. 5

    Add butter and sage sprigs to pan; cook over medium heat until butter browns.

  6. 6

    Discard sage. Add shallots and time; cook for 30 seconds.

  7. 7

    Add lemon juice; cook for 30 seconds. Serve with chicken.

  8. 8

    Garnish with sage leaves, if desired.
