  • 1 largeeggplant, sliced 1/2" thick
  • 2 tbspReduced-sodium soy sauce.
  • 1 tbsprice vinegar
  • 2 tspvegetable oil
  • 2 tspdark sesame oil
  • 1 tspfresh ginger, minced or
  • 1/2 tspginger, ground
  • 1 clovegarlic
  • 1/4 tspRed pepper flakes.

    Preheat the broiler.

  2. 2

    Grease baking sheet & arrange eggplant.

  3. 3

    Whisk together soy sauce, vinegar, sesame & vegetable oils, ginger, garlic & red pepper flakes.

  4. 4

    Brush on eggplant.

  5. 5

    Broil 3-4 min each side.
