Cooking Instructions

Place the kipper fillets into a clean dry saucepan and add enough water to just cover and cook for about 5 minutes. When the kippers are cooked remove to a plate and add a little butter or margarine, salt and pepper to the cooking liquor.

When the butter or margarine is thoroughly melted add the cherry tomatoes and cooked kippers along with the black pudding, halve or quarter the hard-boiled eggs and add them also.

Cook for a further 5 minutes.

Serve immediately with a little of the cooking liquor spooned round.

I have lupus so when I feel good I try to make several bundles and freeze. Someone suggested putting them in a regular muffin tin to bake... The standard Joe's Special involves eggs, ground beef, and usually spinach or greens of some type. In my mind though, it refers to just about any kind of ground beef based hash. This is the kind of thing you cook when you're tired, there's not much in the fridge, and you just want a decent meal. I encourage you to adjust the recipe to include whatever you've got on hand.
