Breakfast burrito

I think of all the meals you can have, a weekend breakfast is the very best. If you’re anything like me, you wake up a little muddy headed and bleary, possibly self induced, and wander around confused until you can finally find the willpower to either pop out for a greasy spoon breakfast (black pudding and Bubble and Squeak are a must), or lazily make something for yourself, and for others if you’re nice. You’re too tired to bother with anything too taxing, so aren’t that bothered about timings, when it’s done, it’s done.
When it is done, and you’ve wolfed down the end result, with a good cup of coffee, and maybe some orange or grapefruit juice, you feel ready. Not for anything, but at least to pop outside the house and see what the world might throw your way today…
Anyway, food lust aside, this is an adaptation of a recipe I read in the Sunday newspaper about 4 or 5 years ago, by the White House chef. It is Barack Obama’s choice for breakfast, although I have Anglicised it, simplifi

Heat a largeish pan till hot. Add oil or butter, if you like, but the bacon or chorizo should render enough that nothing will stick.

Chuck in the bacon (and mushrooms, if you want them) and cook till most of the way to your liking. Add the two eggs, paprika, salt and pepper and cook, stirring constantly to scramble the eggs. About a minute in, throw in all the healthy bits and keep stirring till done. Remove from the heat.

Grate some cheese onto the tortilla, then fill it with the mixture. Fold over the right side, then the bottom, then the left. Pick it up. Put it in your mouth. Happy days.
