Bamboo shoots Curry with Mustard paste (KARIDI Besara in Odisha)

Today I prepared a wholesome lunch with Rice , Roti , Chole , Gajar and Methi Subzi and Bamboo shoots with veggies.
Bamboo shoot is edible and used to make soup , cutlet , curry in India as well as different countries. In most South Asian countries it is a staple diet. Now a days it is available in departmental store in tin or can. It's protein content is high . This has amino acids , micronutrients which are essential for our body.
Bamboo shoots is eaten generally in Western Odisha ,Assam and Chhatishgarh. It's available in rainy season and people pluck young bamboo shoots , chopped them finely length wish and sell it. In my state we call it KARIDI. It can be stored and used when you wish.
I prepared fresh bamboo shoots (stored in refrigerator) with mustard paste. This Curry is very tasty and yummy.

Soak the ingredients of mustard paste for 30 minutes in lukewarm water.

Grind the soaked ingredients of mustard paste by adding required amount of water to a fine paste.

Keep immediately in refrigerator to avoid the pungent smell and taste of mustard paste. You can store in refrigerator for further use.

Take the chopped veggies in a microwave oven safe bowl. Mix 2 drops of refined cooking oil, 1/2 tsp turmeric powder and a pinch salt, 3 tsp mustard paste very well and cook in the microwave oven for 5-6 minutes to have tender veggies.

Heat mustard oil in a wok. Add hing powder and panch phutan seeds to crackle.

Now add chopped garlic and sauté for 1 min in low medium flame.

Mix chopped onion and curry leaves and cook till the onion translucent. Add chopped tomatoes, 3 tbsp bamboo shoots and adjust the salt. Cook for 3 min or till bamboo shoots is cooked and tomatoes are softened.

Add water to make the gravy. Put the veggies. Mix well. Cover and cook for 2 mins in low medium flame.

Now the Curry is done. Serve hot with Rice.
