Ingredients

  • 1 1/2 cupself-rising flour
  • 1/4 tspsalt
  • 1 tspbaking powder
  • 1/3 cupbutter (cubed)
  • 3 tbspsugar
  • 3/4 cupmilk
  • 1 tspvanilla extract
  • 1lemon juice
  • 1beaten egg (to glaze)
  • 1jam and clotted cream to serve

    Preheat oven to 425°F Fahrenheit

  2. 2

    In a large bowl mix the flower salt and baking powder. Add butter and then rub with your fingers until the mix looks like fine crumbs. Stir in the sugar.

    Put the milk into a jug in the microwave for 30 seconds until warm. Add the vanilla and lemon juice and set aside for a moment. Put a baking sheet in the oven.

    Now mix the wet and dry ingredients. Mix with a cutlery knife it will seem wet at first. Spread flour on the work surface and set the dough out. Fold and knead the dough until it is smooth. Pat into a round about 1 1/2 inches deep.

    Use a biscuit cutter to cut out round scones. You may need to press what's left of the dough back into a round to cut out another set. Brush the tops of the scones with beaten egg then carefully place on to the hot baking tray.

    Bake for 10 minutes until risen and golden on the top.
