  • 1 1/2 cupoat bran
  • 1 cupbuttermilk
  • 1 largebanana
  • 1egg
  • 2/3 cupbrown sugar
  • 1/4 cupcoconut oil
  • 2 tspvanilla
  • 1 cupflour
  • 1 tspbaking powder
  • 1 tspbaking soda
  • 2 tspwheat gluten
  • 1/2 tspsalt
  • 1 cupblue berries

    Preheat oven to 375

  2. 2

    Grease muffin pan or use paper liners

  3. 3

    In mixing bowl, whisk together bran and milk. Let set for 10 minutes

  4. 4

    In separate bowl, mix dry ingredients

  5. 5

    Mix mashed banana, beaten egg, brown sugar, melted cocoanut oil, and vanilla into bran mixture

  6. 6

    Stir in dry ingredients

  7. 7

    Gently fold in blue berries

  8. 8

    Fill muffin cups 2/3 full

  9. 9

    Bake 25 minutes
