Par boil the marrows in boiling salted water for 10 mintues

cut the top off the marrow and scoop out the insides reserving some for the mixture.

Place the corn beef in a bowl and add the tomato puree, salt and pepper

Then mix in the 2 eggs and mix

fill the marrows with the mixture .

then sprinkle them with grated cheese , semolina or bread crumbs.

add some water in an oven dish and place the marows in it

bake on 170-190 for half an hour

Stuffed aubergines are called Papoutsakia in Greek (small shoes). It's aubergines with meat and usually bechamel sauce on top. I skipped the bechamel and sprinkled with grated cheese. I used 3 different kinds of cheese, mozzarella, kefalograviera (like gruyere I think) and a smoked cheese that really took the recipe to the next level. Stella T -
