2 canrotel tomatoes
1 canMexican style stewed tomatoes
2 cupchicken broth
1/2 bunchcilantro
1/2green bell pepper
1onion
4 tbspextra virgin olive oil
2 tbspseasoning of choice
1avocado

Preheat oven to 375

Rinse chicken breast then place in baking dish

Dice 1/2 onion and bell pepper and to chicken
4

Cover chicken and veggies in olive oil and toss
5

Add seasoning and bake chicken for 45 min
6

Add all other ingredients to pot and boil, shred chicken and add to soup
7

Add avocado, cheese, tortilla strips, and sour cream and enjoy
