Ingredients

  1. marinade
  2. 1 kgbeef flank
  3. 4 piececalamansi or 1 big lemon
  4. 1 cupsoy sauce
  5. 1 tbspground black pepper
  6. filling
  7. 6 slicecheddar cheese
  8. 6 slicepickled cucumber
  9. 6 slicecarrots
  10. 6 slicesausage or chorizo
  11. 2 piecehardboiled egg (sliced into 4 pcs each)
  12. morcon sauce
  13. 1 piecered bell pepper
  14. 1 cuptomato sauce
  15. 1/2 cupgrated cheese
  16. 1 canpineapple juice
  17. 3 tbspsugar
  18. 1 3/4 cupwater

    Marinade the beef into the mixture of calamansi/lemon,soysauce and pepper for an hour.

  2. 2

    After marinating,keep the marinade sauce because you will add it on the morcon sauce mixture later.

  3. 3

    Fill the beef with the each slice of the cheese,carrots,pickles,egg and sausage/chorizo.arrange them nicely and roll the beef.

  4. 4

    Get a cooking string and tie it around the beef tightly.

  5. 5

    Pan seared the beef in olive oil or butter to seal it.

  6. 6

    Start mixing the ingredients for the sauce. Put the water and all the sauce ingredients in a caserole including the marinade sauce.

  7. 7

    Put the pan seared beef and let it simmer for an hour or more on a low to medium heat until the beef is tender.

  8. 8

    Once the beef is cooked put it out and cut the strings. Slice the beef and pour some of the sauce before serving.
