Ingredients

2 mediumzucchini
2 tspExtra-virgin olive oil
1/2 tspSea salt
1/2 tspGround black pepper

Steps

Preheat grill pan over medium-high heat.

Cut zucchini into 1/2 inch thick slices.

Combine all ingredients in a bowl, then toss well to coat zucchini evenly with spices and oil.

Arrange zucchini in a single layer in pan.

Grill for 4 minutes, turning them over after two minutes.

(Optional) if desired, spear zucchini with slice of mozzarella and a slice of tomato on a toothpick.
