Ingredients

  1. 1 lbboneless, skinless chicken breasts, diced into 1 inch pieces
  2. 1 smallyellow onion, diced
  3. 1 tbspolive oil
  4. 2 clovegarlic, minced
  5. 214.5 ounce cans chicken broth
  6. 4 ozGreen chilies
  7. 1 1/2 tspcumin
  8. 3/4 tsppaprika
  9. 1/2 tspdried oregano
  10. 1/2 tspground coriander
  11. 1/4 tspCayenne pepper
  12. 1salt and pepper to taste
  13. 8 ozNeuchatel cheese (light cream cheese), cut into pieces
  14. 1 cupfrozen corn
  15. 215 ounce cans cannellini beans, drained and rinsed
  16. 1 tbsplime juice
  17. 1chopped cilantro
  18. 1Monterrey jack cheese
  19. 1tortilla chips (optional)

Cooking Instructions

    Heat olive oil in soup pot and saute chicken and onions until chicken is no longer pink. add garlic and cook for about 30 seconds longer.

    Add chicken broth, green chilies, cumin, paprika, oregano, coriander, cayenne pepper and salt and pepper to taste. Bring mixture to boil and simmer for 15 minutes.

    Add Neuchatel cheese and stir until nearly melted.

    Meanwhile, puree 3/4 can of beans with 1/4 cup of soup broth. Add puree, remaining beans and corn to soup. simmer for about 15 minutes longer. Top off soup with lime juice.

    Serve soup with cilantro, monterrey cheese and chips if desired.
