Ragi flour is very healthy and can be made at any time of the day. Rice flour is to be mixed in the same to make it tasty and crispy.
Steps

Make a batter using all the above items except oil and veggies. Keep aside for 15 minutes

Peel and chop all the veggies you are using. If using pot, par boil them and then use. Smear little salt on the veggies and keep on a sieve

Dip veggies in the batter and fry in hot to medium oil and enjoy with chutneys or dip of your choice

I used potatoes, curry leaves and paneer pieces
