Ingredients

  • rest of the curry
  • 1onion, chopped
  • 2 clovegarlic, chopped
  • 500 gramschicken breast, diced
  • 2/3 cupgreek yogurt, or non-fat plain if you prefer a healthier version
  • 1/2 cuptomato paste
  • 2 cupwater, more if required
  • spice mix
  • 2 tsppepper
  • 1 tspsalt
  • 2 tspcurry powder
  • 1 tspcoriander powder
  • 1 tspcumin powder
  • 1 tspginger powder
  • 1 tspcinnamon powder

Steps

    Prepare and mix the spice mix and set aside.

  2. 2

    Heat butter or oil in a large saucepan over a medium heat.

  3. 3

    Soften onion and garlic for a few minutes, stirring often.

  4. 4

    Add the spice mix and cook for a few minutes, stirring often.

  5. 5

    Add chicken and cook until completely white, about ten minutes, stirring often.

  6. 6

    Add the yogurt, tomato paste, potato and water. Ingredients should be covered by liquid, so add more water if not covered.

  7. 7

    Bring to boil, cover, reduce the heat and simmer for about an hour, until sauce has reduced and thickened to the consistency you like.

  8. 8

    Serve with rice, with a side of flat bread, additional greek yogurt and mango chutney.
