
Bonkers for Banana Bread

preheat oven to 350° for glass or shiny metal bread pans. 325° if using dark or non stick bread pan. Make sure oven rack is in center position of oven.

In first bowl mix flours, baking soda, salt, ginger, cinnamon and optional confetti sprinkles. Use hand whisk to evenly blend ingredients in this bowl.

In separate medium size bowl hand whisk eggs, butter milk, and vanilla. Then add butter, sugar and mashed bananas. Whisk until ingredients appear to be evenly blended.

Mix dry ingredients into wet ingredients portioning the dry ingredients to insure proper blend of ingredients.

Using shortening and flour coat bread pan with invisible film of shortening wiping any excess from pan. Coast shortening with flour tapping excess flour out of pan.

Place bread mixture into bread pan and place in oven in center of center oven rack. Cook for 1 hour or when tester returns clean.

When done remove from oven and allow to cool for 10 minutes. Carefully remove bread from pan and allow to cool for 1 hour on cooling racks. Be cautious during bread rising process not to walk heavy or cause vibration. This can interfere with proper rising.
