Ingredients

8 servings
  • 1 largered onion
  • 1 mediumred bell pepper
  • 1 mediumyellow bell pepper
  • 2 lbpeeled, deveined, large, cooked shrimp with tails
  • 1 cupketchup
  • 1/2 cupchopped fresh cilantro
  • 1/2 cupfresh lime juice
  • 3 tbsporange zest
  • 1/2 cupfresh orange juice
  • 2or 3 canned chipotle peppers in adobo sauce choppef

Steps

  1. 1

    cut onion and bell peppers into thin strips.

  2. 2

    layer with shrimp in large zip top plastic bag

  3. 3

    whisk together ketchup and next 5 ingredients

  4. 4

    pour mixture over shrimp mixture . Seal and chill 12 to 24 hours, turning bag occasionally

  5. 5

    serve using slotted spoon

  6. 6

    serve in large class bowl
