
Summer vegetable bake

Preheat oven to 400°F. Finely dice onion and mince garlic, saute both in a skillet with olive oil until softened, about 5 min.

While onion & garlic are sautéing, thinly slice rest of the vegetables.

Spray inside of 8x8 square or round baking dish w/ nonstick cooking spray. Spread onion & garlic in the bottom of the dish w/ the rest of the vegetables vertically, alternating veggies. Sprinkle with salt, pepper, and thyme.

Cover dish & cook for 30 minutes. Remove cover, add cheese, and cook w/out cover for another 15-20 minutes or until cheese is golden brown.
