Ingredients

8 servings
  1. 6 eachlarge red or yellow onion
  2. 1olive oil
  3. 1/4 tspsugar
  4. 2 clovegarlic, minced
  5. 8 cupbeef or chicken stock or combo (traditionally soup is made with beef stock)
  6. 1/2 cupdry white whine
  7. 1/4 tspthyme
  8. 1salt and pepper
  9. 8 slicetoasted french bread
  10. 1 1/2 cupswiss cheese

Steps

3 hours 20 mins
  1. 1

    in lg. sauce pan saute onions in oliv oil until well browned (about 30-40 min)

  2. 2

    add sugar about 10 min into the process to help carmelization

  3. 3

    add garlic and saute for 1 min

  4. 4

    add stock, whine and thyme

  5. 5

    cover partially and simmer until flavors are well blended about 30 min.

  6. 6

    preheat oven to 350°F

  7. 7

    season to taste with salt and pepper

  8. 8

    ladle soup into bowls cover with the toast and sprinkle with cheese

  9. 9

    put into broiler for 10 min. at 350°F or until the cheese bubbles and is slightly browned

  10. 10

    serve immediately
