Multigrain Thalipeeth of Leftover chapattis

Thalipeeth is a very tasty and nutritious Maharashtrian dish eaten as breakfast or as an evening snack. It is a one dish meal by itself. In this recipe I have used multigrains and radish leaves which are usually discarded but they are a great sauce of vital nutrients.

In a large bowl, combine all the flours, powdered chapattis and mix well.

Add all the spices and vegetables along with ginger paste, salt, curd and sesame seeds. Add 1 teaspoon oil. Mix throughly with fingertips and keep for a 10 minutes.

Now slowly add water and knead to a soft dough. Divide it into medium sized balls.

Heat a pan or tawa and smear it with oil. Take a ball of dough and press it into a thick round disc with fingers to make Thalipeeth.

Add a little oil at the sides. Make small holes in the disc and pour a few drops of oil in them. Cover and cook till it's golden brown at the base. Turn and cook other side. Take out and serve hot with fresh curd and pickle along with a blob of butter on top. It's a yummy meal in itself.
