Ingredients

  1. 1⁄4 cup vegetable oil
  2. 1large onion, peeled and cut into small pieces
  3. 1 bunchfresh coriander, roughly chopped
  4. 1small green chilli, chopped into small pieces (or one teaspoon chilli powder)
  5. 1large cauliflower, leaves removed and cut evenly into eighths
  6. 3large potatoes, peeled and cut into even pieces
  7. 2 (8 ounce)cans diced tomatoes
  8. 1 tspfresh ginger, peeled and grated
  9. 3-4 fresh garlic, chopped
  10. 1 tspcumin seeds
  11. 2 tbspturmric powder
  12. to tasteSalt
  13. 1 tbspgaram masala

Steps

  1. 1

    Heat vegetable oil in a large saucepan.

  2. 2

    Add the chopped onion and one teaspoon of cumin seeds to the oil.

  3. 3

    Stir together and cook until onions become golden,

  4. 4

    Add chopped coriander two teaspoons of turmeric, and one teaspoon of salt.

  5. 5

    Add chopped chillis Stir tomatoes into onion mixture.

  6. 6

    Add ginger and garlic; mix

  7. 7

    Add potato and cauliflower or few tbsp water.

  8. 8

    Cover and allow to simmer for twenty minutes (or until potatoes are cooked).

  9. 9

    Add two teaspoons of Garam Masala

  10. 10

    Sprinkle chopped coriander leaves for garnish.

  11. 11

    Serve hot.
