stir together apples, sugar, cinnamon and lemon juice. cover w plastic wrap and chill 30 min. drain apples and place in pie crust forming a dome. place pie crust on top and drizzle w melted butter to seal edges. weave lattice and flute edges. brush with egg wash. sprinkle Demerara sugar and coarse kosher salt over top. Bake in 375°F oven for 1 hour or until golden and bubbly.
