I really enjoy making this simple but hearty meal on a chilly day!
Steps

In a saucepan heat the stock to a slight boil.

Add chopped bacon, onion and sausage

Cook bacon, onion and sausage until sausage is browned.

Heat the oven to 350°F and grease a oval or square casserole dish heavily with margarine or butter.

Layer the sliced potatoes on the bottom of the dish.

Then add a layer of the carrots, then the sausage.

Add the bacon and onions on top and pour the stock over the whole dish.

Cover and cook in the oven for 45-50 minutes.

Serve with thick chunks of bread for the stock.
