Ingredients

  • 2eggplants
  • 1 green capsicum
  • 1red capsicum
  • 2spring onions
  • 1 clovegalic
  • 1fresh lemon juice

  1. 1

    Char grill the eggplants on an open flame. This recipe only works on a gas stove or bbq

    Peel the eggplants. Peeling them under running water makes it so much easier.

  3. 3

    Crush garlic with a pinch of salt. dice half of each capsicum and slice the spring onions.

    Place the crushed garlic and eggplant in a bowl. Mash the eggplant, then add the vegies along with lemon juice.

    Plate up and drizzle with olive oil to serve . Enjoy
