Ingredients

  1. Base
  2. 200 gramsDigestive Biscuits Crumbs
  3. 50 gramsSoft Brown Sugar
  4. 100 gramsMelted Butter or Marg
  5. Filling
  6. 500 gramsCream Cheese
  7. 100 gramsIcing Saugar
  8. 1 tspVanilla Extract
  9. 200 mlLightly Whipped Double Cream
  10. Decoration (optional)
  11. 100 gramsGrated White Chocolate
  12. 4 tspStrawberry Jam

  1. 1

    Mix together the biscuit crumbs and the soft brown sugar then add the melted butter/marg and mix well.

  2. 2

    Spoon into a round 20cm loose bottom tin, lined with foil. Press the crumb mix down with a metal spoon, Put in refrigerator to chill.

  3. 3

    In a large bowl mix together the cream cheese, icing sugar, vanilla with a whisk or wooded spoon. Fold in the lightly whipped double cream.

  4. 4

    (optional)Add 75 grams of the greater white chocolate and mix into to filling

  5. 5

    Spoon the filling mix onto the chilled biscuit base ensuring there are no bubbles, and smooth top.

  6. 6

    (Optional) Decorate the top with the strawberry jam in any pattern you fancy and sprinkle remaining white chocolate over top.

  7. 7

    Chill in fridge for 1 hour

  8. 8

    To serve, remove from tin, remove foil and slice.
