prepare espressos in advance to cool in the fridge

beat the egg yolks together with sugar

add mascapone to the mixture

separately beat egg whites until stiff

add egg whites to the yolks+mascarpone mixture

add bailey's to the espresso
- 7
dip savoiardi sticks in espresso and place into the pan

add cream on top, and another layer of sticks

You could also make this the traditional way and sprinkle cocoa powder on top. I topped it with strawberry compote based on my hubby's request. Tiramisu is such a delicious dessert from Italy with many variations. In my version I left out the uncooked egg yolks and used vanilla flavored whipped cream blended with the marscapone for a loghtens creamy filling and topping.
