I found this recipe over 25 years ago, don't have the foggiest clue where I came across it. I've never seen anything like it since. You may have to adjust the chili powder up or down to your liking, I don't measure it and don't remember how much the original recipe called for.

Ingredients

  1. 1/2 lbbacon
  2. 1 mediumyellow onion- diced
  3. 1 cupmedium to long grain white rice
  4. 1 1/2 tspchili power
  5. 1 canRotel Tomatoes
  6. 1 2/3 cup(approximately) water

Cooking Instructions

    Dice the bacon & fry in skillet until crispy

  2. 2

    Remove cooked bacon but leave the bacon grease. You may need to remove some of the bacon grease, you only want enough to coat the rice & onion

  3. 3

    Add diced onion and rice to bacon grease

  4. 4

    On medium heat brown the rice to a golden brown. Stirring to brown as evenly as possible

  5. 5

    Add chili powder, stir in and let cook a few minutes, the longer you let it heat the more depth to the flavor.

    Add Rotel Tomatoes - undrained

  7. 7

    Add water - about 1 2/3 cup since the Rotel has about 1/3 cup liquid

  8. 8

    Bring to a boil, cover and lower heat to simmer until liquid is absorbed and rice is done. About 20 minutes

  9. 9

    Sprinkle crispy bacon on top and serve

  10. 10
