The Green Stew is mainly made of fresh spinach and fresh green vegetables. A healthy and tasty leafy green stew best for anything. A must in my kitchen in this greens season. Vegetable Stews are only good with fresh veggies only. Very less oil recipe which is 💯 % Healthy for all, from kids to the eldest. Bottle Gourd, broad beans, spinach, potato (optional), raw papaya are the vegetables I used in my Stew. You can add more vegetables which are healthy too.

Ingredients

  1. 1ridge gourd cut into pieces
  2. 1 cupbottle gourd cut into pieces
  3. 1potato cut into pieces
  4. 4-5broad beans cut into pieces
  5. 1 bunchspinach cut roughly
  6. 2-3 tablespoonoil
  7. 1/2 tablespooncoriander powder
  8. 1 tablespoonginger paste
  9. 1/2 tablespooncumin powder
  10. 1/2 tablespoonsalt
  11. 1/3 tablespoonturmeric powder
  12. 4 cupswater
  13. 1 tablespoonchopped coriander leaves

Steps

10 minutes
  1. 1

    Cut all the vegetables and make ready

    Heat a pan with oil and temper fenugreek seeds. Add the chopped vegetables except the spinach. Sauté with salt and turmeric powder.

    Sauté till the vegetables are little soft then add ginger, cumin coriander powder and continue sautéing for few more minutes

    Add the spinach in it

    Sauté for a minute again

    Add water and boil till the reduces to half and vegetables are cooked

    The leafy Stew is ready to serve with some chopped coriander leaves.
