Ingredients

  • 1/2 cupOrange juice
  • 1/4 cupLime juice
  • 2 tbspHoney
  • 1 tspFinely chopped ginger root
  • 1/4 tspDried thyme leaves
  • 1/4 tspSalt
  • 1 tspBlack and red pepper blend
  • 4Boneless skinless chicken breast halves
  • 1 tbspButter or margarine
  • 1 mediumseedless orange, peeled and sliced
  • 1as needed Corn starch (as needed to thicken sauce)

    Mix orange juice, lime juice, honey, gingerroot, and thyme.

  2. 2

    Spray 10-inch nonstick skillet with cooking spray and heat over med-high heat.

  3. 3

    Sprinkle salt and pepper blend over chicken. Cook chicken 3-4 mins, turning once, until brown.

  4. 4

    Stir in orange juice mixture; heat to boiling. Reduce heat to med-low and cover. Cook 8-10 mins or until chicken is no longer pink. Remove chicken from skillet.

  5. 5

    Heat sauce to boiling. Add butter. Cook, stirring constantly until butter is melted and sauce is slightly thickened. Use cornstarch as needed to thicken sauce.

  6. 6

    Serve sauce over chicken and orange slices. Sprinkle with additional thyme, if desired.
