Ingredients

1/2 smallonion
1 tbspvegetable oil
1 1/2 cupdiced button mushroom
1 largepotato, peeled and diced
1/2 cupunsalted vegetable stock
2 cupspinach

Steps

1

Sauté the onion in the oil until soften
2

Add the mushrooms and sauté for 2-3 minutes
3

Add the potatoes and pour in the stock
4

Bring to a boil, then cover and simmer for 10 minutes
5

Add the spinach and cook for 2-3 minutes
6

Mash with a fork or puree in a food processor
