Ingredients

  1. 30 gramsbutter
  2. 180 gramsLeek white parts only
  3. 175 gramspotatoes
  4. 250 mlunsalted vegetable stock or water
  5. 50 gramsfrozen peas

Steps

  1. 1

    Warm butter in pan then sauté the leek for 5-6 minutes until just golden.

  2. 2

    Add the potatoes and stock. Bring to the boil, reduce the heat, cover and simmer for 10 minutes.

  3. 3

    Add the peas and continue cooking for 3-4 minutes or until the vegetables are tender

  4. 4

    Blend until smooth
