Mix Urad dal powder with hing and water and set aside.

Knead together maida with salt and baking soda into a dough

Make small balls out of the dough and put in small parts of urad dal filling into each.

Roll out into small round kachoris on rolling board and deep fry them swelling well.

For alu Sabji boil the potatoes and unpeel them.Cut into small pieces

Heat oil in a karai. Add a pinch of hing. Add ginger paste garammasala turmeric powder and chopped tomatoes and stir fry the masala

As the colour changes add potatoes and salt and fry well again adding some water.

Allow to get the gravy thickened. Add ghee and remove from the flame.

Serve together kachoris and alu Sabji.
